Venezuela Cachapas: Ana Gabriella Viso Betz’s Cachapas Recipe
4 cups corn kernels (if frozen thaw) – becomes 3 cups when
ground
3tsp salt
¾ cup sugar
¾ to 1 cup water (room temp)
Shredded white cheese - mozzarella is an okay substitute
In blender of food processor puree corn kernels. Add salt and sugar. Add water, a bit at a time until desired
consistency. It should be thick and not runny.
Poor batter into a pan and spread it out until it’s about 5 inches
across. Cook until top seems dry and
then flip it over and put a small handful of cheese on top. When cheese is melted fold cachapa over to
make a half moon sandwich and remove from pan.
